Coconut & Cranberry Protein Blondie - MaxiNutriton Recipe

These blondies are a real indulgent treat, but are also good source of protein due to the Promax protein powder, egg, coconut flour and white chocolate in this recipe. The use of white chocolate instead of milk chocolate makes them 'blondies' rather than brownies and the use of coconut flour makes them almost guilt-free!

Ingredients

  • 3 scoops of MaxiNutrition Promax Vanilla
  • 1 whole egg
  • 1 egg white
  • 50g dried cranberries
  • Handful of fresh cranberries (optional)
  • 60g sugar free white chocolate bar (cut into chunks)
  • Handful of shredded dried coconut
  • ¼ cup coconut flour
  • ½ cup sweetener
  • 2 tsp baking powder (optional)
  • Coconut oil for greasing
  • 1 cup unsweetened almond milk
