EASY PROTEIN BREAKFAST COOKIES ƒæî
Ingredients:
- One ripe banana, mashed
- 6 tbsp peanut or almond butter
- 3 tbsp maple syrup
- 1.5 cups oats
- 1/4 cup MaxiNutrition MaxWhey Protein Powder (we used vanilla)
- 1 tsp cinnamon
- 1 tsp baking powder
- Pinch sea salt
- Add-ins of choice (we used 50g dark chocolate chunks, 5 chopped Medjool dates)
Method:
- Stir together dry ingredients until combined, then fold in the wet ingredients. Add in any additional ingredients, such as dry fruit and chocolate, then mix to combine.
- Roll and flatten into six cookies (if the mixture is too sticky, add a touch more protein - too dry and more nut butter or a small splash of milk will do!)
- Chill for 30 minutes, then bake at 180C for 8 minutes, or until lightly golden.
- Cool and store in an airtight container to enjoy.
