Spicy Steak Burrito

  • INGREDIENTS:

    • 100g lean beef steak
    • 1 onion
    • 1 garlic clove
    • ½ red chilli
    • 1 TSP cayenne pepper
    • 1 TSP Worcestershire sauce
    • 50g lettuce
    • 2 wholemeal tortillas
    • 50g grated cheddar cheese
    • 1 TBSP sour cream
    • ½ mashed avocado
    • 40g dry brown rice

    METHOD:

    1. Bring water to the boil and gently simmer the rice for 20 minutes
    2. Cut the onion in to long strips and add to a hot frying pan with a dash of oil. Fry for 3-4 minutes until softened
    3. Cut the steak into finger length strips and add to the pan with the chopped garlic and chilli and fry for 1 minute
    4. Add the cayenne pepper and Worcestershire sauce and cook to your liking then remove from the hot pan onto a kitchen towel
    5. To build the burrito split the steak and rice between the two tortillas and top with avocado, lettuce, sour cream and cheese
    6. Fold the burrito tight so your delicious filling doesn’t escape
