Sweet Potato Brownies

  • INGREDIENTS:

    • 2 medium-large sweet potatoes
    • 14 Medjool dates, pitted
    • ⅔ mug ground almonds
    • 50g Plain flour
    • 1 scoop Maximuscle Promax Chocolate
    • 60g cocao powder
    • 3 Tbsp maple syrup
    • 3 eggs

    METHOD:

    1. Preheat oven 180°C/Gas Mark 4
    2. Peel & boil potatoes for 20 mins
    3. Mash the potatoes, and transfer to a mixing bowl. Add maple syrup and dates to the potatoes and mix
    4. Add the almonds, protein powder and cocao powder to the mixture and stir until blended
    5. Add the eggs to the mixture and stir
    6. Transfer the mixture to a well-greased baking tin
